炒蟹腳
材料:
蟹腳、沙茶醬、蔥段、蒜末、米酒、糖、醬油膏、辣椒片、九層塔
做法:
將蟹腳洗乾淨,將殼拍裂。
熱鍋下2大匙油,將蔥段、蒜末與辣椒片下鍋爆香,將蟹腳放入鍋中
沙茶醬、米酒、糖、醬油膏加入鍋中,炒勻之後加入少許的水,利用水蒸氣將蟹腳蒸熟,炒到水分略收乾,將九層塔與香油加入,關火拌勻即可起鍋。

啤酒燉無骨牛小排 (Boneless Steak in Beer)
材料:
無骨牛小排600g、洋蔥200g、紅羅蔔200g、白羅蔔200g、啤酒1罐、鹽2小匙、糖2小匙、太白粉1大匙、水1大匙
做法:
先準備一鍋熱水把牛小排先汆燙一下,大約燙到牛肉7~8分熟肉無血水即可撈起,清鍋後加點油把洋蔥下鍋爆香,再把紅羅蔔、白羅蔔、台灣啤酒倒入鍋中開小火煮,這時把牛肉切塊狀,煮到鍋裡的羅蔔約8~9分熟再把牛肉、鹽、糖下鍋,食材攪拌均勻後最後加太白粉水再攪拌一下即可起鍋,這樣就完成啤酒燉無骨牛小排
Ingredient:
Boneless steak 600g, Onion 200g, Carrot 200g, Radish 200g, Beer 1 can, Salt 2 teaspoon, Sugar 2 teaspoon, Starch 1 tablespoon, Water 1 tablespoon
Method:
Prepares a pot of hot water to cook the steak, probably cook the steak till 7~8 cooked, when you see there is no bloody water then can take it out. After clean the pot, fry the onion till you smell the fragrance, then you can put in the carrot, radish, 1 can of beer and reduce the heat and leave it. While waiting for the carrot, you can cut the steak into cubes, when the carrot 8~9 cooked then add in the steak, salt and sugar, stir it evenly. Finally add in the starch water and stir it evenly. Serve and enjoy.
蒸出美味的黑糖糕 (Steamed Molasses Cake)
材料:
低筋麵粉400g、太白粉100g、黑糖蜜400g、雞蛋700g、沙拉油200g、水70g、小蘇打20g
(可製作3個8吋烤模的份量或29cm*39cm*5cm長方形鐵盤一份)
做法:
先把所有乾性粉類過篩,再將蛋、沙拉油與黑糖蜜加入並攪拌均勻,最後將小蘇打融入水中,再加入麵糊之中拌勻將麵糊到入模型中,以大火蒸25分鐘,撕去圍邊紙,灑上芝麻增添香氣,就可以上桌享用。
Ingredient:
Cake Flour 400g, Starch 100g, Molasses 400g, Egg 700g, Salad Oil 200g, Water 70g, Baking Soda 20g
(Can produce in three 8" round mould or one 29cm*39cm*5cm rectangle mould)
Method:
First, grease and line your mould with greaseproof paper. Prepared a steamer. All the flour have to be sifted, then add in the egg, sald oil & molasses, stir evenly. Mix the baking soda into water, after stir pour in the paste mix until well combined. Last pour into the mould, large steamer to 25 minutes, after that can bring it out from the steamer, tear off the greaseproof paper, put some sesame on the top for decoration. Serve and enjoy.
